Easy Falafels

* a perfect vegetarian meal.

Serves 4 (needs to be prepared ½ hour before)

1 ½ – 2 tins of chickpeas
2 cloves garlic
½ bunch of parsley (or as much as you like)
fresh or dried oregano to your taste
1 sml onion
½ tsp cumin
1/2 tsp turmeric
cracked pepper to taste
1 tsp baking powder
coconut oil

Method


Blend garlic, onion, oregano and parsley in food processor until fine.
Add drained chickpeas, cumin and turmeric along with pepper.
Add baking powder and blend for a further 15 seconds.
Place in fridge for half hour, then roll into 12 patties (3 per person).
melt oil in frypan and cook patties each side for 3-4 minutes each side.

*I serve with a green salad.
*I leave a few aside to cook for lunch the next day.
*Also great in a wholemeal wrap with salad.
