Crunchy Quinoa Patties with Avocado Smash

Ingredients

Quinoa patties

130 g tri-colour quinoa
½ tsp salt
80 g Gruyere cheese, cut into pieces (2cm) – I used philly cream cheese
40 g chickpea (besan) flour – I use plain flour
3 eggs
30 g white chia seeds
2 spring onions/shallots, cut into thin slices (3 mm)
¼ tsp ground black pepper
Olive oil, for frying

Smashed avocado

2 avocados, flesh only
½ lime, juice only
1 pinch salt

Poached eggs

4 eggs
Balsamic glaze, to serve
Fresh flat-leaf parsley, to serve

Preparation

Quinoa patties

  1. Cook quinoa as per packet directions add some salt.
  2. Place cheese into food processor and chop
    Add flour, eggs, chia seeds, spring onions/shallots, pepper, some salt and cooked quinoa and combine throughout.
    Set aside for 15 minutes to allow mixture to firm.
  3. Place a large frying pan over medium heat and add oil. Divide mixture into 8 portions (approx. 2 tablespoons each) and shape into patties. Working in batches, fry patties for 7-8 minutes on each side or until golden. Transfer into a thermal serving bowl or onto a plate and cover to keep warm. Clean and dry mixing bowl.

 

Smashed avocado

    mash avocado, place lime and salt into mixing bowl and stir.

 

Poached eggs

     Poach eggs to your liking as per normal.-
