Crunchy seeded broccoli
40gm Parmesan cheese
1 tbls sunflower seeds
1 tbls flaxseeds
20gm coconut flour (plain flour)
1 lemon zest & juiced
2 tbls dukkah
Olive oil spray
- Preheat oven to 180oC and line a baking tray with baking paper
- Place parmesan, sunflower seeds, flaxseeds, flour and lemon zest into a blender and finely chop.
- Add dukkah
- Crack eggs into bowl, lightly whisk with lemon juice. Dip the broccoli into the egg, coating all the broccoli, then roll in the seed mixture. Transfer onto baking tray.
- Spray the broccoli with oil spray and bake in the oven 25-30 minutes, turning over halfway through.
*have as a side dish, add to tapas menu or eat on it’s own with a dipping sauce.
