Crumbed Cauliflower bites


100gm coconut milk or cream
1 lime – zest and juiced
1 tsp salt
80gm breadcrumbs (or half mixture with almond meal)
30gm shredded coconut
1 ½ tsp smoked paprika
1 tsp ground cumin
½ tsp ground turmeric
Cracked black pepper
1 cauliflower
Olive oil spray

  1. Preheat oven to 200oC, line a baking tray with baking paper
  2. Place in a shallow bowl the coconut milk and lime zest and juice plus salt
  3. Place breadcrumbs, coconut, cumin, turmeric, pepper and salt into mixing bowl and chop. Place onto a plate
  4. Dip cauliflower into coconut milk/cream then roll through breadcrumb mixture. Place on the baking tray and spray with oil. Bake 25-30 minutes or until golden and crispy.
