Coconut berry protein slice

Makes 10 slices

2/3  cup cashews
½ cup goji berries
½ cup cranberries
¼ cup frozen raspberries
1 cup shredded coconut
2/3 cup whey vanilla protein powder
2 tbls chia seeds
80mls unsweetened almond milk
80gm dark chocolate

Method


 

In a food processor chop up goji berries and cranberries until mostly fine, add cashews and chop up more, add frozen berries, coconut, protein powder and almond milk.
Add chia seeds and mix until well combined.
Line a small loaf dish with baking paper and tip the mixture into the tin and flatten down.
Refrigerate whilst you melt the dark chocolate.
Pour and spread chocolate over the top of slice and place back into the fridge.
Slice up into ten pieces (heat the knife when slicing so the chocolate does not crack.

*Freezable and great for taking a plate to a function.
*Be sure not to indulge too much as this is very high in calories.
