Coconut and quinoa porridge

Serves 2

Ingredients:

40gm (4 dates) medjool pitted dates
100gm quinoa
150gm canned coconut milk/cream
150gm water
1 tsp cinnamon
1 tbls maple syrup (optional)
Fresh raspberries
Coconut flakes
Crushed nuts

Method:

 

  1. Chop dates – set aside
  2. Place quinoa, coconut milk/cream and water into mixing bowl and simmer until quinoa is cooked.
  3. Add cinnamon, maple syrup and reserved dates and cook for a couple of minutes
  4. Transfer into serving bowls and garnish with fruit, coconut and crushed nuts.
  • You can reheat this porridge – obviously without adding the fruit to it.
