Coconut and berry muffins
* perfect snack for all the family.
Serves 6
½ punnet strawberries quartered (or blueberries)
1 banana mashed
½ cup quinoa flakes
1 ½ cups almond meal
¼ cup desiccated coconut
½ tsp chia seeds
1 tsp bicarb soda
1 tsp salt
2 eggs
dash cinnamon for sweetness
2 tbls olive oil
½ tsp vanilla extract
¼ cup cacao nibs (optional)
Method
Preheat oven to 180oC.
Line muffin tin with paper cups.
In a bowl, combine the quinoa flakes, almond meal, chia seeds, coconut, baking powder and salt.
In a separate bowl combine eggs, oil, mashed banana and vanilla extract.
Fold the dry ingredients into the egg mixture, then fold through cacao nibs if using.
Add berries last.
Spoon the mixture into the muffin tin.
Bake for approx 15-20 minutes or until skewer comes out clean.
