Soup to reset…
This soup will help cleanse your gallbladder and liver that will help with your sluggish metabolism.
It is filling and flavourful and can become one of your favourites.
If you’d like the full benefits of the cleanse then have this soup 3 times a day for 4 consecutive days.
This recipe makes one day’s worth of soup – 1.5 litres.
To complement the cleanse you will have green juices in between, and herbal teas.

Ingredients
1 litre bone broth
1/2 bulb celeriac (12cm bulb), cut brown exterior off a little bit, roughly chopped
2-3 leeks
1 daikon radish, roughly chopped
1 (5cm) piece of fresh ginger
2 tbls sea salt to taste
Squeeze of lemon and bit of rind (or 4 drops lemon essential oils)
1 large bunch watercress, roughly chopped
Method
Bring the broth to a simmer in a saucepan.
Add celeriac, leeks, daikon and ginger.
If you need more liquid to cover the vegetables, add more broth.
Simmer for 20 mins
Blend up soup until thick and creamy
Stir in the salt, lemon and watercress
Simmer for additional 5 mins then blend up again.
Note: vegetarians can substitute bone broth for vegetable broth
* Tip: if you place a few stalks of the watercress that have already sprouted roots, place in a glass of water to regenerate and grow more watercress.
