Chilli chicken on roast vegetable quinoa salad

Serves 2
Chilli chicken:
250g chicken breast thinly sliced
½ char grilled/roasted red capsicum
1 red chilli deseeded
2 cloves garlic
1 tsp ground paprika
squirt lemon juice
Roast vegetable salad:
¼ cup quinoa raw
other half char grilled capsicum
1 carrot larged diced
100g diced pumpkin
1 zucchini larged diced
Method
Place all ingredients except for chicken in a food processor and blitz, then pour over chicken and refrigerate for a few hours if you can.
Roast vegetables on oven tray sprayed with oil.
Cook quinoa as per packet directions.
Toss vegetables and quinoa together once cooked.
Char grill chicken and serve on roast vegetable quinoa salad.
Season with cracked pepper and drizzle with lemon juice.
