Chilli Beef

Ingredients:

Lemon feta:


1 lemon
200gm danish feta
20gm lemon juice
60gm olive oil
1 pinch black pepper

Beef:

5 Garlic cloves
1 Onion
1 red capscium -roughly chopped
1 long red chilli
50gm olive oil
1 tsp cumin
1 tbls ground paprika
2 tbls ground turmeric
½ tsp cayenne pepper
½ ground cinnamon
1 tsp ground coriander
Sea salt to your liking
50gm tomato paste
400gm tomatoes diced (tin)
1 tsp dark brown sugar
1kg rump steak – diced 2-3cm
400gm kidney beans – drained and rinsed
2-3 sprigs coriander for garnish

 

Lemon Method:
  1. Grate/zest the lemon
  2. Add lemon zest and the rest of the feta ingredients into a blender and mix until smooth consistency

 

Beef Method:
  1. Chop onion, garlic and chilli
  2. Saute in large saucepan for a few minutes, then add all the spices for and cook for another 3 minutes
  3. Add tomatoes, tomato paste, capsicum, salt and rump steak and cook for 15 minutes until steak is cooked.
  4. Add kidney beans and cook for an additional 5 minutes. Serve immediately topped with reserved lemon feta and fresh coriander leaves.
