Chicken and kale soup

* quick and easy to make soup.

Serves 4

4 chicken drumsticks
4 cups chicken broth
1 leek – white part only
1 large sweet potato, diced
2 large carrots, peeled and diced
6 cloves garlic chopped
good bunch of kale leaves – pulled off the stalks
½ lemon juiced
olive oil
ground paprika to serve

Method


Place broth in a large pan and add chicken. Bring to boil.
Add the potato, carrot, leek and garlic, and simmer for 30 mins.
Reduce heat and remove the chicken and set aside to cool slightly, and then remove bones.
Coarsely shred the chicken. Return the chicken to the pan and add the kale and lemon juice, bring to boil and then simmer for a few minutes.
Serve into bowls and sprinkle with paprika if you like and drizzle a little bit of oil.
