Chia pudding


6 fresh mint leaves
150 g frozen mango pieces (or fresh cut into pieces 2-3 cm)
400 g coconut milk
½ tsp ground cardamom
1 tbsp pure maple syrup or raw honey
100 g chia seeds


Topping

Passionfruit pulp
Frozen raspberries
Kiwi Fruit



Method

 

Chia pudding

  1. Place orange, mint and 150 g of the mango into mixing bowl and chop 10 sec/speed 7. Scrape down sides of mixing bowl with spatula.
  2. Add all remaining pudding ingredients and combine 3 sec/speed 5. Divide mixture between 6 serving glasses or small sealable jars and place into refrigerator for 5 minutes to firm. 

Topping

Serve with passionfruit pulp, frozen raspberries and kiwi – allow raspberries to thaw before eating as the flavours are amazing.
