Chargrilled Fennel & Asparagus Salad
Serves 6
2 large fennel, cut into wedges
2 bunches asparagus, woody ends trimmed
2 ½ tsp olive oil
2 tbs red wine vinegar
2 tsp Dijon mustard
2 tbs finely chopped chives
120g mixed salad leaves
1 bunch radishes, thinly sliced
Method
1. Preheat a barbecue grill or chargrill on medium. Brush fennel and asparagus with some of the oil. Cook fennel on grill for 2 mins each side or until tender. Transfer to a place. Cook the asparagus on grill for 2 mins or until just tender.
2. Whisk the vinegar, mustard, chives and remaining oil in a small bowl.
3. Place the fennel, asparagus, salad leaves and radish in a large bowl. Drizzle with dressing. Toss to combine.
