Cauliflower Soup

* when you’re sick of pumpkin soup.

Serves 4

800gms cauliflower, chopped
2 leeks (roasted if you like)
1 clove garlic chopped
1 tsp cumin
1 tsp turmeric
500ml water (or use half bone broth and less liquid if you like it thick)
200ml coconut cream
1 tsp sea salt
Add homemade vegetable stock if you like or season with more salt.

Method


Melt oil in large saucepan, add  (pre roasted) leeks, garlic and cook a few minutes, add cauliflower, spices water and stock, bring to boil and then simmer for 20 minutes. Add the coconut cream.
Alternatively place all ingredients except for oil into a slow cooker and cook on low for 4 hours.
Either way of cooking, use a bar mixer and blend until smooth texture. Season with pepper.
Side note I use thermomix to make as well.
