Cook in new loaf pan and wrap for a present

1 cup self raising flour
1 cup almond meal
11/2 cups coarsely grated carrot
3 tbls brown sugar
½ cup dried cranberries
1 tsp cinnamon
2 eggs – whisked
½ cup milk
½ cup coconut oil
2 tbls pepitas

Method


Preheat oven to 180oC. Grease loaf pan.
Mix all ingredients except the pepitas till combined, pour into loaf tin, sprinkle pepitas and bake for 1 hour until a skewer inserted in the centre comes out clean.
