Carbonara sauce with good fats

serves 6

1 medium brown onion peeled and halved
1 garlic clove
40gm butter
500gm cauliflower florets
30gm chicken or vegetable stock
250gm water (depending on your preferred thickness)

method


  1. place onion and garlic in bowl and chop 3 sec/speed 5. Scrape down sides of bowl
  2. Add butter and cook 5 min/100oC/speed 1 /mc off.
  3. Add cauliflower and chop 5 sec/ speed 5. Scrape bowl sides of bowl.
  4. Blend 1 min/speed 9/MC on increasing speed gradually.

If you do not have a Thermomix, lightly steam cauliflower, onion and garlic, add a stock paste and butter, then blend in a food processor or use your barmix.

* while cooking carbonara prepare your zucchini noodles and cook up bacon (chicken as well if you like).

* Add steamed vegetables and grilled chicken and bacon or whatever you prefer for your carbonara dish.
