Calamari Salad
* perfect for a light lunch or dinner
serves 4
2 chillies
3 lemons or limes
2 cloves garlic
2 tablespoons olive oil
1 kg cleaned calamari squid tube (cut pineapple cut)
2 cucumbers, halved and sliced
1 punnet cherry tomatoes
1 – 2 cups rocket
some fresh coriander
1/2 cup red onion finely chopped
Method
Grate lemon or limes, juice all three and combined some of the juice, chillies, garlic, half the oil, salt and pepper into screw top jar and shake well, pour over calamari and refrigerate for 30 minutes.
Place on very hot hotplate/BBQ for a minute each side.
Once cooked then place on top of the cucumbers, cherry tomatoes, rocket and coriander, drizzle with rest of the juice and oil, then serve!
