Broccoli fried rice

*great side dish with lean protein

Serves 4

1 cup brown rice
2 tbsp olive oil
3 cloves garlic, finely chopped
1 chilli finely chopped (optional)
1 medium carrot, cut into small pieces
200gm broccoli cut into florets – use stalks as well
½ bunch buk choy, trimmed and coarsely chopped
3 spring onions, thinly sliced
2 ½ tbsp soy sauce

Method


Cook rice as per packet. Then place on a tray and put in refrigerator to cool.
In a frypan heat oil add the rice to become slightly crisp on the bottom of the wok before stirring, stir in garlic and chilli, then add carrot, broccoli and buk choy and and stir for a few minutes, or until vegetables begin to soften. Add the spring onions. And stir for 2 minutes, or until heated through. Add soy sauce and stir for about 1 minute.

 

*ideal lunch meal with some chicken or stir in a small tin of tuna.
*great to take to BBQ or sharing with friends.
