Broccoli and bean salad
* compliment with lean meat.
Serves 2
1 small bunch broccoli broken into florets
handful of green beans topped and tailed
½ cup cannellini beans, drained and rinsed
1/8 cup slivered almonds
1 tbs white wine vinegar
1 tbs olive oil
sea salt and black pepper
Method
Steam or blanch broccoli and beans
Place in bowl with all other ingredients and mix until all coated with vinegar and oil.
Season with pepper and salt
*Perfect with lean meat as iron and vitamin C together is the best way for iron to be absorbed in body.
*Good to have as a snack before training.
