Broad bean soup

* very filling soup with good protein.

Serves 4

450gm fresh or frozen broad beans
100gm brown rice
2 onions
2 celery sticks fresh thyme
250ml bone broth (more depending how thick you like your soup)
coconut oil spray
4 tbls greek yoghurt
2 tbs finely chopped

mint leaves to serve

Method


heat oil on medium in a large saucepan. Add onion and celery and cook for 10 minutes until onions have softened.
Add the brown rice, thyme, broad beans and broth. Season with black pepper and then simmer for 15 minutes until rice is cooked. Remove from heat, take out the thyme sprigs and serve up into 4 bowls, top with a spoonful of yoghurt and sprinkle some mint.

*Great soup to start on when you want to reduce some calories in your diet.
*I freeze my other servings.
