Blueberry crumble slice



80gm coconut oil
300gm fresh blueberries ( or drained frozen blueberries)
3 tsp cornstarch
40gm pure maple syrup
40gm pecans or macadamias
100gm almonds
100gm rolled oats
1 tsp baking powder
¼ tsp ground cinnamon




  1. Preheat oven to 170oC. Grease and line baking tray (28x18cm) with baking paper
  2. Add starch to blueberries and 1 tbls maple syrup – set aside
  3. Chop pecans/macadamias
  4. Mill almonds and oats, add oil, baking powder, cinnamon, salt and maple syrup, mix to thoroughly combined then HALF of the mixture place and press into baking tray. Smooth it out and bake for 7 mins.
  5. Add remaining mixture to nuts and stir
  6. Remove from oven, place the blueberry mixture over the top, then scatter the rest of the nut mixture on top. Bake for a further 30-35 minutes until crust is golden.
  7. Allow to cool slightly before serving.
