Blueberry and chia pancakes

*perfect post workout meal

Serves 4

¼ cup chia seeds
2 ½ cups almond milk
1 tbls pure maple syrup or honey
2 oranges
1 cup wholemeal flour (or quinoa flakes)
1/3 cup almond meal
2 tsp baking powder
½ cup chopped walnuts
1 cup frozen or fresh blueberries
coconut oil (or olive oil spray)
250g tub ricotta
*option protein powder (1/4 cup, but take off flour amount)

METHOD


Combine chia seeds, almond milk and syrup or honey in a large jug. Stand for a few minutes while chia seeds swell up.
Finely grate rind from orange and then cut segments out of orange.
Combine flour, almond meal,(optional protein powder, baking powder, orange rind and half the walnuts in a medium bowl.
Whisk in the milk mixture until smooth. Stir in the blueberries Spray or drop some coconut oil in pan over medium heat, pour in mixture and cook on either side for a couple of minutes.
This makes about 8 pancakes
serve with ricotta cheese, orange segments and remaining walnuts – a squirt of honey if you like.
