Berry & Quinoa Parfait

Serves 2

1/2 cup quinoa flakes
1 cup boiling water
2 tsp honey
1 tsp vanilla extract
6 slices fresh pineapple
1 punnet blueberries
2 cups natural yoghurt
handful of pecans

Method


1. In a heatproof bowl, add the quinoa flakes, and cover with boiling water. Cover with cling wrap and let sit for approx. 10 mins.
2. Remove the cling wrap, add the honey and vanilla and fluff the quinoa with a fork.
3. In a wide glass or jar, layer the quinoa with slices of pineapple, yoghurt and berries, Top with pecans and more berries and enjoy.
