Beans all mixed salad

* very nutritious meal with fibre and protein.

Serves 8

250gm green beans topped and tailed
400g can red kidney beans, rinsed
400g cannellini beans, rinsed
1 large red capsicum, roasted and cut into strips
1/3 cup pitted kalamata olives, sliced
some basil leaves
1 tbsp olive oil
1 tbls balsamic vinegar

Method


Blanch the green beans for 1 minute, then rinse under cold water.
Mix all the beans and roasted capsicum together on a large serving plate or bowl, scatter the olives over the top with the basil leaves.
Mix the oil and vinegar together and drizzle over the top.
