Bean, broccoli and avocado salad

*fully balanced salad – full of fibre.

Serves 4

1 small bunch broccoli broken into florets
100gm green beans topped and tailed
1 ripe avocado, sliced all the seeds from a pomegranate,
50g whole almonds, crushed
½ bunch mint
50g pumpkin seeds
50g sunflower seeds
juice of lemon
100g greek/natural yoghurt
1 tbs olive oil
sea salt and black pepper
Method


Steam or blanch broccoli and green beans for a minute – refresh in cold water and pat dry
Place in bowl with avocado, nuts, pomegranate seeds and other seeds, plus the mint and mix.
Whisk lemon juice, yoghurt and oil together and drizzle over the salad, mix through gently. (If you are having some of the salad for lunch the next day – do not coat with dressing until you are about to serve it).
Season with pepper and salt

*Pomegranates are full of vitamin C, K and folate – plus has great amount of dietary fibre.
*Serve with lean protein to give your iron levels a boost!
*Good to have as a snack before training.
