Banana bread with goji berries

Serves 10

1/3 cup oats
2 tbls rice malt syrup (use sugar if you don’t have this)
1/3 cup coconut oil
4 eggs
1/3 cup coconut flour
1/3 cup almond meal or LSA
2 tbls goji berries
2 tbls baking powder (or gluten free baking powder)
1 tsp cinnamon
3 ripe mashed bananas
chia seeds

Method


Preheat oven to 180oC/160oC fan forced
Grease and line loaf pan 7x22cm
Combine 3 tsp oats and chia seeds mix together and set aside.
Use electric beaters to beat the coconut oil and rice malt syrup (sugar) until fluffy.
Beat in 1 egg and tbls coconut flour and then repeat this process with all eggs and flour.
Add almond meal, goji berries, baking powder, cinnamon, banana and oats to the egg mixture.
Spoon into prepared pan.
Smooth the surface and then sprinkle over the oats and chia seeds that you set aside earlier.
Bake for an hour or until firm and a skewer inserted into the centre comes out clean.
Cool in pan for 15 mins and then transfer to a cooking rack.

*Craisins can be used instead of goji berries, and wholemeal flour instead of coconut flour.
