Banana and oat bars

*kids will love these in their school lunches and great for work snacks

2 mashed bananas
2 ½ cups rolled oats
1/3 cup dried cranberries
few shakes of cinnamon
2 tbls coconut oil
2 tbls rice malt syrup
1 egg
1 tbls sesame seeds
1 tbls pepitas
1 tbls pine nuts
1 tbls LSA mix
45gm dark chocolate

METHOD


1. Preheat oven to 160oC and line baking slice tray (16 x 26cm) with baking paper
2. Heat up rice malt syrup and coconut oil in microwave for 45 seconds to melt.
3. Place all the ingredients into a bowl and mix well. (Except chocolate) Then spoon into prepared slice tray, pressing mixture down.
4. Bake for ½ hour.
5. Let cool a bit then transfer onto cooling rack.
6. Melt chocolate then drizzle over the slice.
7. Cut into 20 pieces and let chocolate set before serving.

*These are freezable.
*Lasts in a sealed container in fridge for 5 days.
