Apricot, pepita and chia power balls
* post workout, nut free and delicious.
1/2 cup dried apricots
1/2 cup fresh dates
½ cup vanilla protein powder
½ cup pepitas
1/3 cup ground flaxseed or mix of almond meal as well
2 tbls chia seeds
dash cinnamon
¼ cup water (maybe a bit more)
Method
Place all dates and apricots into processor and chop for 10 seconds, then place rest of the ingredients into processor until all combined and sticky.
Roll into balls
*Note high calories so limit intake per day.
*Nut free and perfect for school lunches
*Freezable and great for taking a plate to a function.
*You can add some sunflower seeds or a nut of preference to change up from time to time
