Apple and or Rhubarb Slice

*great for when you entertain or have to bring a dish

BASE
1 cup quinoa flakes
1 cup coconut
½ cup rolled oats
1 tablespoon raw cacao
1/2 cup virgin coconut oil
2 large egg whites

FILLING
1 cup chopped apples or 200g rhubarb (or half of each, or try blueberries/blackberries)
1 tsp cinnamon
¼ tsp vanilla ext

TOP
1 cup desiccated coconut
3 egg whites


METHOD
1. Preheat oven to 180oC and line 25x15cm baking tray with baking paper
2. Filling:- place apple/rhubarb or both in a saucepan along with cinnamon and vanilla plus dash of water. Bring mixture to boil and then simmer, cook until thick texture then let cool.
3. Base:- quinoa, coconut, oats and cacao into processor until really fine, then add coconut oil and grind until mixture sticks together.
4. Beat in 2 egg whites, spoon the dough in the baking dish and spread it out.
5. Beat the remaining egg whites and carefully fold in coconut. Spread the filling over the base, then spread the meringue coconut mix on top.
6. Bake in oven 25-30 minutes, cool before cutting.
