Indian Chopped Salad

Serves 6 (as a side)
1 tbs olive oil
2 tsp cumin seeds
¼ red onion, thinly sliced
2 Lebanese cucumbers, halved, sliced
6 radishes, halved, sliced
400g can Chickpeas, rinsed, drained
400g can Lentils, rinsed, drained
2/3 cup chopped coriander, plus extra leaves to serve
1 ½ tbs lime juice

Method


1. Heat the oil in a medium frying pan over medium heat. Cook the cumin seeds for 1 min or until fragrant. Cool.
2. Place onion, cucumber, radish, chickpeas, lentils, chopped coriander and lime juice in a bowl.
Drizzle with cumin mixture.
Season.
Toss to combine.
Top with coriander leaves.
