Berry pudding

Serves 1

¾ cup berries of your choice
¼ cup chia seeds
1 scoop protein powder
¾ cup almond milk
1 tsp vanilla essence/extract
1 tbls rice malt syrup or honey
1 banana, mashed (frozen)
cocoa nibs for dressing

Method


Soak the chia seeds, milk, vanilla, syrup and banana for at least an hour in a tall glass or mason jar. Best to soak overnight.
Empty the contents and add protein powder into a blender and blitz until smooth, add a bit more milk if needed .
Layer a glass with pudding and berries and dress with cocoa nibs or nuts if you prefer.
